Macaron w/ Caramel Buttercream

Gosh, I haven't posted in such a long time. Well, how about a macaron with caramel buttercream? I actually made a cake for a friend (browned butter yellow cake with cookie dough frosting and caramel frosting!) which is why I had some leftover caramel frosting to be sandwiched between two macaron shells!

EGGS AND PIE :D

 EGGS! 300 eggs. That's how many eggs my parents bought this past weekend!!! Amazing, delicious, and maybe slightly crazy...From where you ask? Peterson Farm! I've never been there, but I do know I love their eggs. For the past week I've had an egg every. single. morning. But they're amazing, so I can't complain :)

 I love this photo. I'm not sure why...it just looks pretty neat! Oh, and the trip out to wahiwa (?) waipahu (?) wouldn't be complete without a stop at Sunny Side. This was the first time I've tried their pie, and boy oh boy, I've been missing so much.
 Peach pear pie.... yum. Shucks, I forgot to take a picture of the chocolate cream pie. My brother LOVED it. He said it's better than Ted's. I have to say, the crust was pretty darn good. But I'm still looking for a dark chocolate cream pie! Maybe I'll just have to make my own....!

Simple One Bowl Chocolate Cake with Pearl Sugar and Dark Chocolate Ganache

Whew, was that a long title or what? The title may be long, the cake and toppings are actually pretty simple (and delish!). I used a one bowl chocolate cake recipe from here. 1/4 the recipe and used a 6 inch cake pan. After the cake finished baking, I made a simple syrup (I just use equal parts of sugar and water) and brushed/soaked! the cake. It made it sooooo moist!!! After, a made a super rich, super decadent ganache (equal parts bittersweet chocolate and heavy cream) and then smothered the cake in this amazing concoction (but not before I had some, of course!). And, for the finishing touch, a huge sprinkle of pearl sugar! Btw, does anybody have a good recipe for pearl sugar? I'm horrible at making waffles.....

Black and White Cookies and Lemon Chewies from The Cookiepedia

Remember this post about The Cookiepedia? Well, I just realized I never posted any pictures?! I made black and white cookies and lemon chewies. Yum! They were both fantastic! It was my first time making black and white cookies, but the directions and ingredients were actually fairly simple (still looking for the oven temp, though!). I brought them to an XC meet (I'm off crutches! Woo hoo!) and everyone loved them :)



The lemon chewies were lemony, but still sweet enough without being overpowering. They were a little dry, but that might have been because of the cooking time....oops!

Chocolate Macaron w/ Chocolate Ganache


I've done it! I've finally made at least two successful batches of macarons! Woot woot! :) For the shells, I used the same recipe but added some cocoa powder. They are slightly more chewier and definitely pack a huge cocoa punch! The cocoa shells and chocolate ganache are a match made in heaven :)
